Picking a level for a whole batch
One level applies to every file, so choose for the heaviest documents in the set. Medium suits mixed folders: image-heavy scans shrink a lot, while text-only files pass through nearly unchanged because there is little to compress.
High is worth it for archives where legibility matters more than fine detail, such as receipts and forms. It also clears the document title, author, subject and keywords, which is useful when files will leave your organization.

Time, memory and file names
Everything runs on your device, so a batch of large scans takes as long as your computer needs, usually a few seconds per file. Keep the tab open while the batch runs. If your device runs short of memory with very large files, split the work into smaller batches.
Inside the ZIP, each file keeps its original name with a compressed suffix, so nothing overwrites your originals when you unpack it.
